Soya Pulao | Cooking with California Walnuts | Sanjeev Kapoor Khazana

Soya Pulao is a low-calorie soya delicacy, a favourite with nutritionists. Its high protein and heart- protective compounds make a healthy addition to the regular pulao.

SOYA PULAO

Ingredients

1 cup soya granules
1 cup Basmati rice, soaked for 30 minutes and drained
1 cup milk, warm
1½ tbsps oil
2 medium onions
1 inch cinnamon
8-10 cloves
6-7 green cardamoms
1 tsp caraway seeds (shahi jeera)
1 tbsp ginger-garlic paste
¼ tsp turmeric powder
¼ cup chopped California walnuts
¼ cup dried cranberries + for garnishing
1 tsp red chilli powder
Salt to taste
1 tsp garam masala powder
California walnut kernels for garnishing
Spring onion green curls for garnishing

Method

1. Take soya granules in a bowl. Add warm milk and soak for 20-25 minutes.
2. Heat oil in a deep non-stick pan.
3. Slice onions.
4. Add cinnamon, cloves, cardamoms and caraway seeds to pan and sauté till fragrant. Add sliced onions and sauté till golden brown.
5. Add ginger-garlic paste and turmeric powder and sauté for 1 minute. Add soya granules alongwith milk, mix and cook for 1-2 minutes.
6. Add chopped California walnuts, mix and cook for 1 minute. Add dried cranberries and mix well.
7. Add chilli powder, salt and 2½ cups water and mix. Add rice and mix. Add garam masala powder, mix and cook till rice is done.
8. Serve hot garnished with California walnut kernels, dried cranberries and spring onion green curls.
