Soya Manchurian Hot Dog | Sanjeev Kapoor Khazana

Hot dog rolls stuffed with spicy soya manchurian mixture drizzled with mayonnaise.

SOYA MANCHURIAN HOT DOG

Ingredients

2 cups soya chunks, soaked
4 hot dog buns
2 tablespoons soy sauce
1½ tablespoons vinegar
1 tablespoon tomato ketchup
1 tablespoon red chilli paste
1 tablespoon oil + for deep-frying
1 tablespoon chopped garlic
½ tablespoon chopped ginger
3-4 spring onion bulbs, sliced
1 medium yellow capsicum, finely chopped
Salt to taste
½ tablespoon ginger-garlic paste
¼ cup cornflour
1 tablespoon cornflour slurry
Chopped spring onion greens for garnishing
Mayonnaise for drizzling

Method

1. Mix together 1 tablespoon soy sauce, ½ tablespoon vinegar, tomato ketchup and red chilli paste in a bowl.
2. Heat oil in a non-stick pan. Add garlic, ginger and spring onion bulbs, mix and sauté well.
3. Add capsicum and mix. Add prepared sauce mixture and stir. Add salt and little water, mix and bring to a boil.
4. Squeeze soya chunks and put in a bowl. Add remaining vinegar, remaining soy sauce, ginger-garlic paste and cornflour and mix.
5. Heat sufficient oil in a kadai. Deep-fry soya chunks till golden brown. Drain on absorbent paper.
6. Add fried soya chunks to the sauce and mix well. Add cornflour slurry, stir and cook till the mixture thickens.
7. Slit hot dog buns from the centre and fill with a generous portion of soya chunks mixture. Garnish with spring onion greens, drizzle mayonnaise on top and serve immediately.
