Soya Chaap Biryani Chef Harpal Singh @riceparliament

Soya chaap biryani is a delicious and vegetarian twist to the traditional biryani, using soya chaap, which is a protein-rich soy product. Soya chaap is made from soy protein and marinated in flavorful spices. It's a popular alternative to meat dishes.

Ingredient
3 tbsp Oil
2 no Bay leaves
1 tsp Cumin seeds
2 no Onion chopped
1 tbsp Ginger garlic paste
3 no Tomato chopped
Salt to taste
2 tsp Kashmiri red Chilli powder
tsp Turmeric powder
1 tbsp Coriander powder
1 tsp Garam masala
tsp Green cardamom powder
cup Water
5 no Frozen soya chaap
1 cup Water
1 cup Curd
3 no Green chili slit
1 inch Ginger julienne
25-30 no Mint leaves
2 tbsp Fresh coriander chopped
1 tbsp Fried brown onion (brishta)
1 tsp Whole black pepper
1 tbsp Ghee
1 no Lemon juice
tsp Saffron
2 liter Water
1 tbsp Salt
2 no Bay leaves
1 tsp Caraway Seeds
tsp Black pepper
1 cup Parliament gold jumbo basmati rice soaked
1 tsp Fresh coriander chopped
10-12 no Mint leaves
1 tsp Brishta
tsp Green cardamom powder
tsp Garam masala
1 tsp Saffron water
1 tsp Rose water
1 tbsp Ghee
1 inch Ginger julienne
5-6 no Mint leaves
tsp Brishta
tsp Garam masala
tsp Green cardamom powder
tsp Saffron water
tsp Rose water
3 tbsp Ghee
Tight dough for dum

Method
1. Take a Handi on medium flame add oil, bay leaves and cumin seeds and saut for a minute.
2. Now add chopped onion and fry for 4-5 minutes until light brown.
3. Add ginger-garlic paste, chopped tomato and salt as per taste and fry until it becomes a paste.
4. Now add Kashmiri red chilli powder, turmeric powder, coriander powder, garam masala, green cardamom powder and some water and cook for a minute.
5. Take a frozen soya chaap cut into a round shape and add soya and water to the masala and mix well.
6. Now whisk a curd and add in it.
7. Add slit green chilli, julienne ginger, mint leaves, chopped fresh coriander, brown onion (brishta), whole black pepper, ghee, lemon juice and saffron mix well.
8. Now take a kadai on medium flame add water, salt, bay leaves, Caraway Seeds, black pepper and boil the water.
9. Add soaked Parliament Gold Jumbo Basmati rice in boiling water and cook till 85%.
10. Take that masala base handi and add boiled rice in it and spread it all around to make a layer.
11. Add on top chopped coriander, mint leaves, brown onion, green cardamom powder, garam masala, saffron, rose water, ghee and julienne ginger.
12. Now make a second layer and add boiled rice, mint leaves, brown onion, garam masala, green cardamom powder, saffron, rose water and ghee.
13. Apply dough on the edges of the lid and place the lid on the vessel and place a jug of water on top of the lid.
14. It dum on high flame for the first 10 minutes.
15. After that remaining 12-15 minute in medium flame.
16. Enjoy the soya chaap biryani with raita.
