A spicy and flavor potato recipe that is simple and quick to make!

SOUTH INDIAN ROAST POTATOES

Ingredients

3-4 medium potatoes, boiled, peeled and cut into quarters
2 ½ tbsps oil
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp Bengal gram
1 tsp split skinless black gram
1 dried red chillies
10-12 curry leaves
A pinch of asafoetida (hing)
15-20 madras onions
½ tsp turmeric powder
1 tsp red chilli powder
Salt to taste
1 tbsp sambhar masala
2 tbsps coriander leaves
Scraped fresh coconut for garnish
Fried curry leaves for garnish

Method

1. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add cumin seeds, Bengal gram, split skinless black gram and sauté till golden brown.
2. Snip red chilli and add along with curry leaves and shallots and sauté till golden brown. Add turmeric powder, red chilli powder, salt and sambhar masala and sauté for 2-3 minutes on medium heat.
3. Add coriander leaves, mix and take the pan off the heat. Transfer into a serving bowl, garnish with coconut and fried curry leaves. Serve hot.
