A spicy and flavor potato recipe that is simple and quick to make!SOUTH INDIAN ROAST POTATOESIngredients3-4 medium potatoes, boiled, peeled and cut into quarters2 ½ tbsps oil1 tsp mustard seeds1 tsp cumin seeds1 tsp Bengal gram1 tsp split skinless black gram1 dried red chillies10-12 curry leavesA pinch of asafoetida (hing)15-20 madras onions½ tsp turmeric powder1 tsp red chilli powderSalt to taste1 tbsp sambhar masala2 tbsps coriander leavesScraped fresh coconut for garnishFried curry leaves for garnishMethod1. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add cumin seeds, Bengal gram, split skinless black gram and sauté till golden brown.2. Snip red chilli and add along with curry leaves and shallots and sauté till golden brown. Add turmeric powder, red chilli powder, salt and sambhar masala and sauté for 2-3 minutes on medium heat.3. Add coriander leaves, mix and take the pan off the heat. Transfer into a serving bowl, garnish with coconut and fried curry leaves.
