A slightly healthier avatar of pizza for you prepared with semolina. You won't be able to make out the difference!
SOOJI PAN PIZZA

Ingredients

1 cup semolina (sooji)
1-2 green chllies, finely chopped
1/3 cup yogurt
Salt to taste
1 tbsp fruit salt
2 tbsps olive oil + for drizzling
Toppings
Pizza sauce as required
Grated mozzarella as required
1 small onion, sliced
½ cup mixed coloured capsicum slices
¼ cup boiled sweet corn kernels
6-8 cherry tomatoes, halved
4-5 button mushrooms, sliced
Green olive slices as required
Salt to taste
Crushed black peppercorns to taste
Dried mixed herbs for sprinkling
Red chilli flakes for sprinkling
Fresh basil sprig for garnish

Method

1. Take semolina in a large bowl. Add green chillies, yogurt, salt and ¾ cup water and mix well. Set it aside for 20 minutes.
2. Add fruit salt and ½ cup water and mix well.
3. To make the pizza base, heat oil in a non-stick pan. Pour the prepared mixture into the pan and spread it lightly. Cover and cook on medium heat for 2-3 minutes. Flip the pizza base and apply pizza sauce over the top of it.
4. Sprinkle mozzarella cheese on top. Place onion slices, mixed coloured capsicums, boiled sweet corn kernels, cherry tomato halves, mushroom slices, and arrange a few green olive slices. Sprinkle salt and crushed black peppercorns.
5. Sprinkle some more mozzarella cheese on top of the pizza, add dried mixed herbs and red chilli flakes. Drizzle a little oil, cover and cook on low heat for 2-3 minutes or till the cheese melts.
6. Cut the pizza into wedges and serve hot garnished with basil sprig.
