Songkran 2021, Krabi Thailand. Happy Songkran Everyone

Happy Songkran 2021! In this video we share a quick update on the current situation in Thailand now and Ao Nang in Krabi Thailand, over a family dinner of Thai hot pot (jim jum) at home. Stick around to the end of the video for some previously unseen footage from Songkran 2018 in Ao Nang to put some smiles on your faces. Fingers crossed we'll have a Songkran like that again soon!

The recipe for the Thai hot pot (Jim jum) in the video is-

For the Meat-
250 grams of meat sliced into roughly 2mm thick pieces (You can use any meat or seafood of your choice. If you are using seafood you do not need to marinade it, but you can if you wish).
3 tbspn oyster sauce
tbspn soy sauce
1 tspn sugar
1 tspn sesame seeds
1 egg

1) Mix the oyster sauce, soy sauce, sugar and sesame seeds and marinade the meat for 20 minutes (or longer if you wish).
2) Break the egg over the meat and mix through just prior to cooking.

For the Broth-
1 L water
10 slices daikon (roughly 4mm thick)
2 lemongrass stems, cut into thirds
4 leaves kaffir lime, torn into quarters
5 slices galangal (roughly 2mm thick)
2 shallots, crushed
5 chilies (or as many as is to your taste), crushed
20 leaves Thai sweet basil
3 tbspn oyster sauce
2 tbspn fish sauce
1 tspn salt

1) In a pot add the daikon to the water and bring to the boil, then reduce and simmer till the daikon turns clear.
2) Add the oyster sauce, fish sauce, salt, lemongrass, kaffir lime, galangal, shallots, chilies, and Thai sweet basil.
3) Bring to boil again and simmer for 5 minutes. The broth is now ready to add to the hot pot.

Other Ingredients
Glass noodles
Additional Thai sweet basil
Vegetables: You can use any mild flavoured vegetables of your choice, in the video we used Chinese cabbage, bok choy, Chinese morning glory and moon flowers. Some other suggestions include Asian mushrooms, other Asian greens, sliced carrot, and spinach.

1) Add the broth to the hot pot, cover and bring to the boil.
2) Add the meat and seafood and then top with vegetables, then glass noodles and finally Thai sweet basil.
3) Ensure everything is submerged in the broth and then cover for 3 4 minutes (till done).
4) Serve with Thai suki dipping sauce (Optional - available from Asian grocery stores and online shops).
