Somen Noodles Wrapped with Eggs (Omu-Somen)
Servings: 2

INGREDIENTS
100g somen (thin noodles)
1/2 tablespoon vegetable oil
1/4 onion (shredded)
1/4 carrot (shredded)
30g Chinese leeks (bite-sized pieces)
1 canned tuna
Some salt
Some black pepper
6 eggs
1/2 tablespoon vegetable oil
Some worcester sauce
Some scallions (chopped)

PREPARATION
1. Cook somen noodles.

2. Heat an oiled pan. Stir-fry shredded onions and carrots.

3. Add canned tuna and noodles (1) into the pan and stir-fry. Season with salt and pepper.

4. Beat the eggs in a bowl.

5. Heat another oiled pan. Pour the beaten eggs into the pan to make an omelet.

6. Place the stir-fried noodles (3) onto a plate. Place the omelet (5) on the noodles. Put some sauce and scallions on top.

7. Enjoy!
