Smoked eggplant pachadi is an excellent relish made with charring the eggplant until cooked and the skin peeled off; adding some yogurt and spices into the mashed smoked eggplant tempered with a nice seasoning to make it yummy. Goes well with phulkas.

ingredients:
Egg plant 1 n
Tomato 1 n
Onion 1 n
Coriander seeds 1tb
Whole red chilly 4 n
Cumin seeds 1ts
Garlic 4 n
Salt
Turmeric
Green chilly chopped` 3 n
Chopped coriander 1 b
Lime juice 1 ts

description:
1. Char roast on the flame egg plant, tomato, onion, and garlic, remove the peel it and chop them it to small pieces and keep it aside.
2. Heat a pan add cumin seeds, coriander seeds, whole red chilly, dry roast them and crush the ingredients and garlic, in a mortar pestle.
3. Take a pan add dry roast powder, add green chills, chopped coriander, and salt, add roasted vegetables, and mix all these well, and squeeze lime juice.
4. Serve this hot with phulkas.
