Skillet Herbed Yam Gratin

SKILLET HERBED YAM GRATIN

PREP TIME: 15 MINUTES
COOK TIME: 45 MINUTES
SERVES: 6-8

INGREDIENTS
1small yam medium, half moon sliced
A handful of fresh parsley, chopped
2 springs of chives, chopped
50g butter
1 small onion
1 tbsp flour
1 cup milk
1 tsp black pepper
1 tsp salt
tsp black pepper
200g cheddar cheese, grated.

DIRECTION
Heat a pan over medium heat, add the butter, onion, stir until translucent then add the flour, stir until mixed in then add the milk and stir into a smooth consistency.
Add the black pepper, salt, stir in then add the grated cheddar cheese stir till the cheese dissolves and set aside.
Heat the olive oil in a pan over medium heat, add the sliced yam, saut then add the chopped parsley, chives and toss to coat evenly.
Assemble the sauted yam in the skillet, add the sauce, sprinkle with cheese and place in a pre-heated oven.
Bake at 180c for 35 minutes.
Skillet herbed yam gratin ready to serve.
