VARI KA PULAO

Ingredients:
1½ cups vari
1½ tbsps ghee
1 tsp cumin seeds
3 green chillies
10-12 cashew nuts, halved
1 medium carrot, cut into small cubes
80 grams yam (suran), peeled and cut into small cubes
80 grams red pumpkin, peeled and cut into small cubes
1 medium tomato, deseeded and cut into small cubes
1 tbsp ginger-green chilli paste
Senda namak to taste
2 tbsp chopped fresh coriander leaves
Fresh coriander sprig for garnish

Method:
1. Heat ghee in a deep non-stick pan, add cumin seeds and let them change colour. Break the green chillies in half and add in the pan, sauté well.
2. Add cashew nuts, carrot and yam and sauté well. Cook for 1-2 minutes. Add red pumpkin, tomato, ginger-green chilli paste and senda namak and mix well.
3. Add vari and sauté for 1 minute. Add water 2 ½ cups and mix well. Adjust senda namak. Cover and cook for 8-10 minutes.
4. Add chopped coriander and gently mix. Take the pan off the heat and transfer on to a serving plate.
5. Garnish with fresh coriander sprig and serve hot.


SINGHADA PARANTHA WITH ARBI

Ingredients:
1½ cups singhada atta + for dusting
6-7 colocasia (arbi), boiled, peeled and mashed
1 inch ginger, finely chopped
2 green chillies, chopped
1 tbsp chopped fresh coriander leaves
Senda namak to taste
1 tsp ghee + for drizzling

Method:
1. Take singada atta in a large bowl, add arbi, ginger, green chillies and chopped coriander. Add senda namak and mix well. Add sufficient water and knead to a soft dough.
2. Apply ghee and knead till well combined. Set aside for 15-20 minutes.
3. To make the paranthe, take a portion of the dough and shape into a ball. Dust the worktop with singhada atta and flatten the dough ball slightly. Roll into a thin disc.
4. Heat a non-stick tawa, place the parantha on it, cook till golden brown on both sides. Apply ghee on each side and cook for 1 minute.
5. Serve hot.
