Simple Pulao | Not So Junky - by Chef Siddharth | Sanjeev Kapoor Khazana

On some days a simple pulao is all you need to make meal times satisfying. Check out this healthy version.

SIMPLE PULAO

Ingredients

1½ cups brown rice, soaked for 30 minutes
1 tablespoon ghee
1 inch cinnamon
4-5 green cardamoms
3-4 black peppercorns
3-4 cloves
1 star anise
1 bay leaf
1 medium onion, sliced
1 tablespoon ginger-garlic paste
1-2 green chillies, halved and slit
1 medium carrot, peeled and cut into diamonds
½ medium head cauliflower, separated into florets
Salt to taste
1 tablespoon finely chopped dried barberries
8-10 almonds
4-6 French beans, diagonally sliced
3-4 tablespoons green peas
Fresh coriander sprig for garnishing
Raita
1 cup yogurt
A pinch roast cumin powder
Salt to taste
¼ medium pineapple, cut into small cubes
2 tablespoons fresh pomegranate pearls
1 tablespoon finely chopped fresh coriander leaves
Fresh mint sprig for garnishing

Method

1. Heat ghee in a deep non-stick pan. Add cinnamon, green cardamoms, black peppercorns, cloves, star anise and bay leaf and sauté till fragrant.
2. Add onion and sauté till golden. Add ginger-garlic paste and green chillies sauté for 1 minute.
3. Add carrot and cauliflower florets, mix and cook for 30 seconds. Add drained rice and mix. Add 3 cups water and mix.
4. Add salt, barberries and almonds, mix, cover and cook on medium heat till rice is ¾ done.
5. To prepare raita, take yogurt in a bowl and whisk. Add cumin powder, salt, pineapple, pomegranate and mix. Add coriander leaves and mix well.
6. Add French beans and green peas, mix and cook on low heat till rice is done.
7. Serve hot with raita garnished with mint sprig.
