On some days a simple pulao is all you need to make meal times satisfying. Check out this healthy version. SIMPLE PULAOIngredients1½ cups brown rice, soaked for 30 minutes1 tablespoon ghee1 inch cinnamon4-5 green cardamoms3-4 black peppercorns3-4 cloves1 star anise1 bay leaf1 medium onion, sliced1 tablespoon ginger-garlic paste1-2 green chillies, halved and slit1 medium carrot, peeled and cut into diamonds½ medium head cauliflower, separated into floretsSalt to taste1 tablespoon finely chopped dried barberries 8-10 almonds4-6 French beans, diagonally sliced3-4 tablespoons green peasFresh coriander sprig for garnishing Raita1 cup yogurtA pinch roast cumin powderSalt to taste¼ medium pineapple, cut into small cubes2 tablespoons fresh pomegranate pearls1 tablespoon finely chopped fresh coriander leavesFresh mint sprig for garnishing Method1. Heat ghee in a deep non-stick pan. Add cinnamon, green cardamoms, black peppercorns, cloves, star anise and bay leaf and sauté till fragrant. 2. Add onion and sauté till golden. Add ginger-garlic paste and green chillies sauté for 1 minute. 3. Add carrot and cauliflower florets, mix and cook for 30 seconds. Add drained rice and mix. Add 3 cups water and mix. 4. Add salt, barberries and almonds, mix, cover and cook on medium heat till rice is ¾ done.5. To prepare raita, take yogurt in a bowl and whisk. Add cumin powder, salt, pineapple, pomegranate and mix. Add coriander leaves and mix well. 6. Add French beans and green peas, mix and cook on low heat till rice is done. 7.
