Shikampuri Kabab | Sanjeev Kapoor Khazana

A very pouplar kabab from the Indian cuisine made using mutton mince. These melt in mouth kababs are a must try !

Shikampuri Kabab

Ingredients

300 grams mutton mince
2 tablespoon ghee
1 teaspoon cumin seeds
3 -4 green cardamom
4-5 Black peppercorns
1 inch stick cinnamon
3 -4 dried red chillies
3 -4 garlic cloves
¼ cup chana dal, soaked
1 small onion finely chopped
1green chilli, finely chopped
1 teaspoon fresh coriander, finely chopped
1 teaspoon fresh mint, finely chopped
1 teaspoon garam masala powder
1 egg
Salt to taste
Chaat masala powder for sprinkling


Method

1. Heat ghee in a pan. Add ghee, chana dal, cumin seeds, cardamom pods, black peppercorns, cinnamon stick, garlic cloves, chana dal and mutton mince.
2. Add 1 cup water and boil till the water dried out and the mince is cooked.
3. Cool and grind the mixture into a smooth paste.
4. Transfer the mixture into a mixing bowl.
5. Add onions, green chilli, lemon juice, coriander, fresh mint, garam masala powder and mix well.
6. Divide the mixture into 8 equal portions and shape each portion into tikkis.
7. Crack egg in a bowl add salt and whisk well.
8. Heat oil in a non-stick pan.
9. Coat the tikkis with eggs and shallow fry till golden brown on both sides.
10. Sprinkle chaat masals on top of the tikkis.
11. Serve hot with onion rings, lemon wedges and green chutney.
