Shepherd Pie | Sanjeev Kapoor Khazana

Also known as Cottage Pie, Shepherd Pie is a meat pie with a mashed potato crust. This wholesome pie is a must add into your recipe book!

SHEPHERD’S PIE

Ingredients

400 grams mutton mince
1 tablespoon olive oil
1 medium onion, finely chopped
¼ tablespoon chopped ginger
1 tablespoon chopped garlic
3 teaspoons dried oregano
Crushed peppercorns to taste
1 medium carrot, cut into cubes
1 tablespoon chopped celery
½ cup parboiled corn kernels
¼ cup green peas
1 medium tomato, finely chopped
2 tablespoons Worcestershire sauce
1½-2 cups chicken stock
Salt to taste
2-3 medium potatoes, boiled and mashed
¼ cup milk
2 tablespoons butter
Grated cheddar cheese for topping

Method

1. Preheat oven at 180ºC.
2. Heat olive oil in a non-stick pan. Add onion and sauté till translucent. Add ginger and garlic, mix and sauté till golden.
3. Add mutton, mix and cook for 5-7 minutes. Add 2 teaspoons oregano and crushed peppercorns and mix well.
4. Add carrot, celery, corn kernels, green peas and mix well. Add tomato and mix well.
5. Add Worcestershire sauce, mix and cook on low heat for 5-7 minutes. Add chicken stock and salt, mix and cook on medium heat for 35-40 minutes.
6. Take mashed potatoes in a bowl. Add milk and butter and mix well. Add remaining dried oregano, crushed peppercorns and salt and mix again.
7. Layer a glass baking dish with mutton mixture, spread mashed potato mixture evenly and top with some cheese. Put the glass baking dish on a baking tray, place the baking tray in preheated oven and bake for 15-20 minutes.
8. Serve hot.
Preparation time: 8-10 minutes
Cooking Time: 1-2 hours
