Shalgam Matar Ki Sabzi Recipe
Shalgam Matar Ki Sabzi (Turnips greens peas stir fried), is a great Stri fried Indian dry vegetable perfect as a side dish. This dish is made in India during winters as that is when you get fresh turnips and fresh peas. The turnips absorb the flavor of the spices while simmering. In turn, each bite of turnip turns out succulent and full of bursting flavors. The overpowering spices are kept at bay instead a dash of Garam Masala is enough to spike up the flavor of the dish.

Shalgam Matar Ki Sabzi Recipe
Ingredients Quantity
Tunip 4 no
Ghee 2 tbsp
Asafetida ¼ tsp
Dry red chilli 3 no
cumin seeds 1½ tsp
ginger chopped 1 tbsp
garlic chopped 1 tbsp
green chilli chopped 3-4 no
salt to taste
turmeric powder ½ tsp
dry mango powder 1½ tsp
green peas 1 cup
garam masala powder 1 tsp
green peas 1 cup

Method
Peel the turnip and cut into cube size.

In a pan heat ghee , add asafetida, dry red chilli. cumin seeds and saute for 1 mins

Add ginger,garlic, green chilli & mix well

Add turnip and Saute well

Add salt to taste, turmeric , dry mango powder, green peas, & mix well

Cover and cook for 8-10 mins add garam masala powder, coriander chopped and mix well.

Transfer to a serving bowl

Garnish with coriander sprig and serve hot
