Shakkarpare | Holi Special | Sanjeev Kapoor Khazana

Sweet cripsy and flaky deep fried cookies especially popular during the Indian festive season.

SHAKKARPARE

Ingredients
1 cup sugar (shakkar)
750 grams refined flour (maida)
1 cup oil + for deep-frying
Salt to taste

Method

1. Heat a non-stick pan. Add sugar, 1 cup water, oil and salt, mix and boil till the sugar melts. Remove from heat and set aside.
2. Add flour, mix and knead to a semi-stiff dough. Roll out into a large disc and cut out diamonds.
3. Heat sufficient oil in a kadai. Deep-fry the diamonds on medium heat till golden brown. Drain on absorbent paper and cool.
4. Serve immediately or store in airtight containers.
