SHAHI TUKDA | Double Ka Meetha Banane Ka Tareeka | शाही टुकड़ा बनाने का तरीका | Atima's Kitchen

Shahi tukda, is a sweet dish, which is very easy to make. It’s ingredients are mostly available in every Indian kitchen. Sometimes it is called Double ka Meetha because it is made with bread (Double Roti)

Ingredients:
6 pieces Bread slices
½ Litre Milk (full fat)
150 gm. Sugar
200 gm Water
Ghee for Deep Frying

For Flavoring:
1 tsp. Rose water
4 nos Green Cardamom (Powder)
Few strands Saffron
For Garnishing
Dry fruits (sliced and crushed) and Rose petals.

Process:
Rabadi making : Boil Milk on medium heat. Stir occasionally till it become less than half in quantity. Then low the heat and stir continuously (to prevent from sticking in the bottom of pan, and burning) till milk becomes semi solid. Remove and cool. Add little flavoring to it.
Cut bread slices into bite size pieces and air dry them for approx. half an hour. TIP: this step prevents the bread to soak excess ghee while frying.
Heat sugar and water in a pan and let the sugar dissolve. While heating, stir one or two times. When syrup starts to boil, low the heat and let it boil for 3-4 minutes more. Remove and let it cool a little. When syrup is lukewarm, add the desired flavoring to it.
Heat ghee in a pan. Fry bread pieces quickly from both sides and remove. Add fried bread pieces in the syrup for 25-30 seconds and remove them on a plate. TIP: Do not soak bread longer in the syrup to prevent it from becoming soggy.
Add some part of the flavored Rabadi on top of each pieces. Garnish with Dry fruits and Rose petals.

Serve crunchy and less sweet, Indian Shahi Tukada HOT or COLD.
