A smoky flavoured brinjal dish with a shahi healthy twist made using only a few ingredients that is easily available at home.

SHAHI BHARTA

Ingredients

1 large brinjal (baingan)
½ cup yogurt + for drizzling
1 tbsp oil + for greasing
4-5 cloves
6-7 garlic cloves, unpeeled
1 large onion, finely chopped
Salt to taste
1-2 green chillies, chopped
1 tbsp chopped fresh coriander leaves + for garnish
Rotis to serve

Method

1. Grease the brinjal with a little oil and make a few slits on it. Insert 4-5 cloves and garlic in individual slits.
2. Roast the brinjal on direct flame for 10-15 minutes, turning in between till the outer skin is burnt and the flesh is soft and cooked. Switch off the flame and allow to cool slightly.
3. Remove the garlic cloves, dip your fingers in water and peel the brinjal and transfer the peeled brinjal in a bowl and mash it using a fork.
4. Peel the garlic cloves and chop them.
5. Heat oil in a non-stick pan, add remaining cloves and cook till fragrant. Add onion and a pinch of salt sauté for 1 minute.
6. Add green chillies, chopped garlic and 2 tbsps water and mix well. Add cooked brinjal and salt and sauté till well combined. Cook for 1-2 minutes.
7. Whisk yogurt and add into the pan and sauté for 1-2 minutes. Add chopped coriander and mix well. Take the pan off the heat.
8. Transfer into a serving bowl, drizzle yogurt on top and garnish chopped coriander. Serve with rotis.
