This enticing dish is created when the popular street food ‘Vada Pav’ meets the delicious and mouth-watering Indo-Chinese flavours.

SCHEZWAN VADA PAV

Ingredients

¼ cup schezwan chutney
3-4 medium potatoes, boiled, peeled and mashed
1 tbsp oil
2 tsps finely chopped garlic
1 tsp finely chopped ginger
1-2 green chillies, chopped
¼ cup finely chopped cabbage
¼ cup finely chopped carrot
4-5 French beans, finely chopped
Salt to taste
Crushed black peppercorns to taste
2 tbsps finely chopped spring onion greens
1¼ cups Tata Sampann Pakoda Mix
Fried green chillies to serve

Method

1. Heat oil in a non-stick pan, add garlic, ginger and green chillies and sauté for 1 minute.
2. Add cabbage, carrot and French beans and mix well. Add salt and crushed black peppercorns and sauté for 1-2 minutes.
3. Add schezwan chutney, mix and cook for 1-2 minutes.
4. Switch the heat off, add the spring onion greens and mix well.
5. Take the potatoes in a large bowl, add the vegetable mixture into it and mix till well combined.
6. To make the batter, take Tata Sampann Pakoda Mix in a large bowl, add ½ cup water and whisk till a smooth batter is formed of coating consistency.
7. Divide the potato mixture into equal portions and shape each portion into a ball.
8. Heat sufficient oil in a kadai.
9. Lightly flatten each potato ball and dip into the batter. Gently slide into the hot oil and deep fry till they turn golden brown and crisp. Drain on an absorbent paper.
10. Arrange the vadas on a serving plate and serve hot with pavs, schezwan chutney and fried green chillies.
