Ingredients for Schezwan sauce:
Kashmiri Red Chili 8-7
Red Whole Chilies 9-10
Oil 2 tbsp
Garlic (chopped) 1 tbsp
Ginger (chopped) 1 tbsp
Vinegar 1 ½ tbsp
Tomato Ketchup 1/4 cup
Soy Sauce 1/2 tbsp
Vinegar 1/2 tbsp
Black Pepper 1 tsp
Salt to taste
Sugar 1 ½ tbsp
Ingredients for noodles:
K&N’s Chicken Tempura 330g (12-15 pieces)
Noodles 1 pack (250g)
Olive oil 2 tbsp
Onion (julienne) 1/4 cup
Garlic (minced) 1 tbsp
Green capsicum (julienne) 1/4 cup
Red capsicum (julienne) 1/4 cup
Carrot (julienne) 1/4 cup
Cabbage (shredded) 1/4 cup
Salt to taste
Schezwan sauce 4 tbsp
Spring onion (chopped) for garnish
Directions:
1. Soak Kashmiri red chilies in lukewarm water for 30 minutes.
2. In a blender add red whole chilies, soaked Kashmiri red chilies, vinegar and blend it into a smooth paste. Add water if required.
3. In a pan heat oil, add garlic, ginger and sauté it for a minute. Add red chili paste in it and cook for 2 more minutes on medium low flame.
4. Add tomato ketchup, soy sauce, vinegar, salt, black pepper, sugar and mix it well. Add water according to your desired consistency.
5. Cover and cook it on medium low flame for 8 to 10 minutes or until oil appears. Your sauce is ready. You can store it for a week in an airtight jar.
6. Simmer a pot of slightly salty water; add one teaspoon oil and noodles in it. Let it boil until your noodles are fully done. Strain and set aside.
7. In a pan heat olive oil, add garlic and sauté it for a minute. Then add onion and sauté for another minute.
8. Now add your veggies; carrot, green capsicum, red capsicum, cabbage and stir fry on high flame.
9. Add salt, schezwan sauce and give it a good mix on high flame. Make sure you don’t overcook your veggies, keep them crunchy. Lastly add your noodles and mix all them until well combined. Take it off the flame, your noodles are ready.
10. Prepare K&N’s chicken tempura as per the instructions on the pack. Set aside.
11. Top your schezwan noodles with prepared K&N’s chicken tempura and garnish with spring onion.
12. Your tasty and spicy schezwan noodles with tempura are ready to serve.
