Deep fried processed cheese and spring onion dumpling served with schezwan chutney.SCHEZWAN CHEESE FRITTERSIngredients1 cup grated processed cheese2 tsps schezwan chutney1 cup chopped onions½ cup refined flour (maida)1 tbsp chopped garlic¼ cup chopped spring onions1 tsp baking sodaButtermilk, as requiredOil to deep fryRed chilli sauce, as requiredA little fresh parsleyMethod1. Heat sufficient oil in a kadai. 2. Put grated cheese in a bowl, add refined flour, baking soda, onions, spring onions, garlic, schezwan chutney and sufficient buttermilk and mix to make a dough. And salt and mix.3. Shape the mixture into quenelles with 2 teaspoons, slide into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.4. Put a little red chilli sauce in a small plate.
