Schezwan Cheese Fritters | Cooksmart | Sanjeev Kapoor Khazana

Deep fried processed cheese and spring onion dumpling served with schezwan chutney.

SCHEZWAN CHEESE FRITTERS

Ingredients

1 cup grated processed cheese
2 tsps schezwan chutney
1 cup chopped onions
½ cup refined flour (maida)
1 tbsp chopped garlic
¼ cup chopped spring onions
1 tsp baking soda
Buttermilk, as required
Oil to deep fry
Red chilli sauce, as required
A little fresh parsley

Method

1. Heat sufficient oil in a kadai.
2. Put grated cheese in a bowl, add refined flour, baking soda, onions, spring onions, garlic, schezwan chutney and sufficient buttermilk and mix to make a dough. And salt and mix.
3. Shape the mixture into quenelles with 2 teaspoons, slide into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.
4. Put a little red chilli sauce in a small plate. Place the fritters over the sauce, garnish with a little parsley and serve hot.
