Sindhi Biryani Recipe in English

Ingredients for Biryani Masala:
Oil 1/4 cup
Onion (sliced) 1 cup
Cumin seeds 1 tbsp
Whole black pepper 15-20
Badiyan ka phool 2-3
Green cardamom 4-5
Cinnamon stick 2-3
Black cardamom 3
Cloves 5-6
Bay leaves 2
Chicken 1 kg
Ginger garlic paste 1 tbsp
Tomatoes (sliced) 1 cup
Coriander powder 1 tbsp
Red chili powder 1 tbsp.
Cumin powder 1 tbsp
Salt 1 tbsp
Turmeric powder 1 tsp
Lemon juice 1 tbsp
Potatoes (cubes) 4-5
Aloo Bukhara 6-7
NESTL MILKPAK Yogurt 1 cup
Water 1 cup

Ingredients for Boiled Rice:
Water 5-6 cups
Cumin seeds 1 tbsp
Salt 1 tbsp.
Green cardamom 2-3
Black cardamom 2
Lemon juice 1 tbsp
Rice (soaked) 3 cups

Ingredients for Assembling:
Prepared biryani masala
Boiled rice
Green coriander as required
Green chilies as required
Mint leaves as required
Lemon slices as required
Yellow food color 1 tsp
Kewra water 1 tsp

Directions for Biryani Masala Preparation:
1. In a pot heat oil and add onion. Cook until they turn golden brown in color.
2. Now add cumin seeds, whole black pepper, star anise, green cardamom, cinnamon stick, black cardamom, cloves, bay leaves and cook for a minute.
3. Now add chicken and cook until chicken changes color.
4. Now add ginger garlic paste and mix it well.
5. Add tomato, coriander powder, red chili powder, cumin powder, salt, turmeric powder, lemon juice and cook until tomatoes get soft.
6. Now add potatoes, plum, NESTL MILKPAK Yogurt and cook for 2-3 minutes. Add water and cover and cook until chicken and potatoes are fully done. Set aside.
Directions for Boiled Rice Preparation:
7. In a pot heat water and add green cardamom, cumin seeds, salt, black cardamom, lemon juice and rice. Boil until 80% done. Strain and Set aside.
Directions for Assembling:
8. In a pot add layers of biryani masala, boiled rice, green coriander, mint leaves, lemon slices, green chilies. Lastly add yellow food color and kewra water on top.
9. Now cover and steam over low flame for 10-15 mins. Your Sindhi Biryani is ready. Serve and enjoy.
