Here is the recipe!Ingredients:2 russet potatoes, peeled and diced2 zucchinis, diced2 yellow squashes, diced1 red pepper, deseeded and diced1/2 onion, dicedsausage, 2 large links2 Tbsp. olive oil2 cloves garlic, minced1 14.5 oz can of diced tomato, drainedsalt & pepperPreheat oven to 375°F/190°F. Layer all of the veggies and sausage on one or two 9x13 baking pans, depending on the size of the vegetables you use. Drizzle on olive oil, and sprinkle on the garlic, diced tomato, salt, and pepper.
