Sarson ka saag with makki ki roti

Ingredients for Blanched Veggies:
Sarson ka Saag (Fresh Mustard Leaves) 1 kg
Palak (Spinach) 500 g
Bathua (Goosefoot) 300 g
Baking Soda 1 tsp
Water as required
Chilled water (for soaking) as required

Ingredients for Saag:
Blanched veggies
Water 5-6 cups
Garlic cloves 8-10
Green chilies (round cut) 1 cup
Salt 1 tbsp / to taste
Wheat flour 1/4 cup
Nurpur Unsalted Butter 2 tbsp

Ingredients for Tarka:
Oil 2 tbsp
Garlic (sliced) 1/4 cup
Whole red button chilies 10-12
Nurpur Unsalted Butter 2 tbsp

Ingredients for Makai ki Roti:
Makki ka Atta (Cornmeal) 2 cups
Salt 1 tsp
Water (lukewarm) as required

Directions for Blanched Veggies Preparation:
1. In a pot heat water and bring it to a boil.
2. Add sarson ka saag, palak, bathua, baking soda and boil for 7-8 minutes.
3. Remove them from hot water and transfer into chilled water. Let them soak for 1-2 minutes. Drain the water and set aside.
Directions for Saag Preparation:
4. In a pot add blanched veggies, water, garlic, green chilies, salt and mix well.
5. Cover and cook over for 1-2 hours or until veggies are done.
6. Now remove the lid and turn the flame to low. Mash the veggies with wooden spoon.
7. Now add wheat flour and mix it well.
8. Add Nurpur Unsalted butter and mix it again. Your saag is ready.
Directions for Tarka Preparation:
9. In a pan heat oil and add garlic. Fry for a minute.
10. Add red chilies, Nurpur Unsalted butter and cook for another minute.
11. Pour the prepared tarka over saag and mix well.
Directions for Makai ki Roti Preparation:
12. In a bowl add cornmeal, salt, water and knead a smooth dough. let it rest for 10-15 mins.
13. Now take the prepared dough and make small dough balls from it.
14. Roll them out with rolling pin into flat circle.
15. Transfer onto preheated griddle and cook each side until golden brown in color.
16. Your Makki ki roti is ready.
17. Serve it with sarson ka saag and enjoy.
