Sarson da Saag Makki di Roti | Dhabba Style Sarson ka saag | Borosil recipe| Chef Harpal Singh Sokhi | chefharpalsingh

The classic Punjabi dish: Sarson da saag te makki di roti. Best had with some white butter, jaggery or honey.

Ingredients Quantity
Mustard leaves chopped 2 bunch
Spinach leaves chopped 1 bunch
Pigs weed (bathua) chopped 1bunch
Fenugreek leaves chopped ½ bunch
Green chilies 4-5no.
Ginger chopped 1 tbsp
Salt to taste
Water 1 ½ cup
Ginger 1 inch
Green chilies 3-4 no.
Vinegar 2 tbsp
Cornmeal flour 1 cup+ for dusting+ 3tbsp
Warm water as required
Ghee 2 tbsp+ 1tbsp
Garlic chopped 1 tbsp
Ginger chopped 1 tbsp
Green chilies chopped 4-5no.
Onion chopped 1 no.
Tomatoes chopped 1 no.
Red chili powder ½ tsp+ for sprinkle
Radish to serve
Onions to serve
Green chilies to serve
Ginger to serve
White butter to serve
Jaggery to serve


Method
1. First chop mustard leaves, spinach leaves, pigs weed leaves and fenugreek leaves and pressure cooker it along with green chillies, ginger, salt and water up to 7-8 whistle.
2. Now take vinegar in a bowl and cut the ginger in juliennes and add it in the vinegar.
3. Take the green chilies and give a slit in between and add it in the vinegar and let it rest properly.
4. Now take a borosil bowl, add cornmeal flour, salt and make a dough with warm water, and cover it with a cloth and keep aside to settle it.
5. Now release the pressure from the cooker and add cornmeal flour it in and mesh the saag properly.
6. Now take a kadai add ghee, garlic chopped, ginger chopped, green chilies chopped and sauté it properly.
7. Now add onion chopped and sauté it again for some time.
8. Now add chopped tomatoes, and red chili powder and sauté it properly.
9. Now add Sarso ka saag in it and mx it well. Cook the saag for at least 20mins on slow flame.
10. Now take the dough and make it smooth in texture.
11. Now roll the dough in dry flour and make it flat with the help of your fingers.
12. Roast the roti from one side by applying ghee on it, flip it other way and apply ghee on it, sprinkle red chili powder on the rotis.
13. Our sarso ka saag and makai ki roti is ready.
14. Serve in the plate along with radish, onions, green chilies, ginger and apply white butter on roti and even on the saag.
15. Serve it with jaggery to enhance the flavour.
