#വറുത്തരച്ച നാടൻ #മത്തിക്കറി #Sardine in Roasted coriander and dried chilly gravy*Ingredients*Sardine - 1 kgDried red chilli - 10Coriander seeds - 2 tbspFenugreek seeds - 1/2 tspCoconut oil - 1 tbspGinger - 1 inchGarlic - 3 - 4Turmeric powder - 1/4 tspKashmiri chilli powder - 2 tspGreen chilli - 3 - 4Salt - to tasteCurry leaves - fewKokum - 2 pieces*Method*Dry roast whole dried chilli, coriander and fenugreek seeds till light brown in colour in medium flame.Turn off the flame and add kashmiri chilly powder. Saute for a while.Let it cool.Grind the roasted ingredients along with ginger and garlic by adding some water. Grind until a fine paste.Mix the paste well with enough water and pour it into the fish.Add turmeric powder, green chilli, curry leaves, kokum and salt.Let it cook for about 10 mins in medium to high flame.Swirl the earthen pot in between.After 10 mins, check the seasonings and reduce the flame from low to medium.Cook until the gravy is thickened.Drizzle 1 tbsp of coconut oil and add few curry leaves.
