Serves 6:1 and pounds tomatoes, diced1 small onion, finely chopped3-5 scallions (green and white parts), finely sliced cup finely chopped fresh herbs cup parsley cup basil or dill2 tablespoons finely chopped fresh mint2 teaspoons dried crushed oreganoSalt and freshly ground pepper, to taste1 and cups all-purpose flour1 teaspoon baking powderOptional: pound feta cheese, crumbledVegetable oil, for fryingtzatziki sauce for dipping In a large mixing bowl, combine the diced tomatoes, onions, scallions, and herbs. Season lightly with salt and pepper. In a small bowl, combine the flour, baking powder, salt, and pepper and whisk to combine.Add the flour to the tomato mixture and mix well with a spatula until everything is combined.Mix in the crumbled feta is using.Taste and add more salt and pepper if desired.This mixture can sit in the refrigerator for a few hours so that all of the flavors marry. It can also be made immediately. I prefer to allow it to sit at least 1 hour for best flavor. Heat the oil in a frying pan over medium high heat.Carefully drop 1 tablespoon of batter at a time in the oil and fry at least 3 minutes before flipping to prevent the fritter from falling apart.Cook until golden brown all around. 6-7 minutes.
