Santa Cake | Christmas Special | Sanjeev Kapoor Khazana

A quick and easy recipe to make this beautiful and delicious cake for kids this Christmas.

SANTA CAKE

Ingredients

½ kg readymade round chocolate cake
8 cups icing sugar
2 cups unsalted butter, room temperature
2 tsps vanilla essence
4 tbsps milk
5-6 drops of red food colour
Strawberry slices as required
Black fondant as required

Method

1. Sieve icing sugar in a bowl. In a stand mixer, add butter, 2 cups icing sugar and vanilla essence, combine well using a whisk attachment.
2. Add the remaining icing sugar occasionally and cream till mixture is light and creamy.
3. Add milk and cream the mixture for 1 minute. Scrape the sides of the mixer and cream again till well combined.
4. Add 3 cups of the prepared buttercream in a large bowl and add 1 cup in a small bowl. Set aside the remaining white buttercream.
5. Add 4 drops of red food colour in the large bowl and 1 drop in the small bowl. Mix well to make red and pink butter cream respectively.
6. Place the cake on a cake board; trim the top of the cake using a serrated knife. Cut the cake in half to create 2 layers.
7. Keep the top layer aside, add a portion of the white buttercream and spread it evenly. Arrange the strawberry slices and add a little more of the buttercream and gently spread it.
8. Place the remaining cake layer on top and add white buttercream generously on top. Spread evenly covering all sides. Refrigerate it for 10-15 minutes.
9. Add pink buttercream on top of the cake and spread it evenly.
10. Add the white buttercream and red buttercream in individual piping bags fitted with star nozzles.
11. Start piping white buttercream rosettes to represent santa’s hat furry border.
12. Continue piping white buttercream along the cake edge from one side to the other, fill in the stars to create santa’s beard.
13. Pipe the moustache by making two reverse scrolls using white buttercream.
14. Pipe red buttercream stars on the remaining surface covering the top and the sides of the cake to represent santa’s hat.
15. Use black fondant and shape them into small balls to make eyes. Place them on the cake. Pipe out a knot using the remaining white buttercream on corner of the moustache to complete santa’s hat. Serve.
