Sankranthi special Appalu | How to make Chekkalu - Pappu Chekkalu in Telugu by Hyderabadi Ruchulu

INGREDIENTS
1. Rice Flour
2. Green Chilli Paste
3. Chopped Curry Leaves
4. Mint Leaves - 1/2 Cup
5. Coriander Leaves - 1/2 Cup
6. Soaked Bengal Gram - 1/4 Cup
7. Fried Groundnuts
8. Sesame Seeds - 2-3 Tablespoons
9. Cumin Seeds - 1/2 Teaspoon
10. Ajowan - 1/2 Teaspoon
11. Ginger Garlic Paste - 1 Teaspoon
12. Salt
13. Oil - For Deep Fry

To a bowl, add 2 cups rice flour. Add 1/2 teaspoon cumin seeds, 1/2 teaspoon ajowan, 2 tablespoons sesame seeds, 2-3 tablespoons fried groundnuts, 1/4 cup soaked bengal gram, 1/2 cup chopped curry leaves, 1/2 cup mint leaves, 1/2 cup coriander leaves, 1 teaspoon ginger garlic paste, 2 teaspoons green chilli paste (chilli powder also could be used), garlic cloves and onions could be grinded and used. Mix all the ingredients in the flour. Add 2 tablespoons hot oil, this will make appalu crispy. Mix. Add salt, chilli powder if necessary. For 2 cups flour, 1 cup boiled water with a pinch of salt is added. Mix. Knead the dough by adding cold water. Close the lid on unused dough. Make small balls out of the dough. Spread oil on a plastic cover, press the dough with fingers evenly on all sides and make a hole in the middle. Place it on a cotton cloth. Heat oil for deep fry. Fry prepared dough in oil, first on high flame, then flip it and cook on low flame. Fry till it turns light brown.
