Paneer pieces sandwiched with green chutney, dipped into gram flour batter and deep fried to make these delicious pakoras.

SANDWICH PANEER PAKORA

Ingredients

250 grams cottage cheese (paneer), cut into 1 inch cubes
¾ cup gram flour (besan)
Oil for deep-frying
Green chutney as required
A pinch of soda bicarbonate
Salt to taste
¼ teaspoon turmeric powder
½ teaspoon red chilli powder
2 teaspoons chopped fresh coriander leaves
Fresh coriander sprigs for garnishing

Method

1. Heat sufficient oil in a kadai.
2. Slit each cottage cheese cubes with one side intact and apply some green chutney inside the slit side.
3. Mix together gram flour, soda bicarbonate, salt, turmeric powder, chilli powder, coriander leaves in a bowl. Add sufficient water and whisk into a semi-thick and smooth batter. Add 2 tablespoons hot oil and whisk well.
4. Dip each stuffed cottage cheese in the batter and deep-fry in hot oil till golden brown and crisp. Drain on absorbent paper.
5. Serve hot garnished with coriander sprigs.
