Paneer pieces sandwiched with green chutney, dipped into gram flour batter and deep fried to make these delicious pakoras.SANDWICH PANEER PAKORAIngredients250 grams cottage cheese (paneer), cut into 1 inch cubes¾ cup gram flour (besan)Oil for deep-fryingGreen chutney as requiredA pinch of soda bicarbonateSalt to taste¼ teaspoon turmeric powder½ teaspoon red chilli powder2 teaspoons chopped fresh coriander leavesFresh coriander sprigs for garnishingMethod1. Heat sufficient oil in a kadai. 2. Slit each cottage cheese cubes with one side intact and apply some green chutney inside the slit side.3. Mix together gram flour, soda bicarbonate, salt, turmeric powder, chilli powder, coriander leaves in a bowl. Add sufficient water and whisk into a semi-thick and smooth batter. Add 2 tablespoons hot oil and whisk well.4. Dip each stuffed cottage cheese in the batter and deep-fry in hot oil till golden brown and crisp. Drain on absorbent paper.5.
