The traditional Bengali sweet, sandesh has a separate fan base all over the country. So, we decided why not club it with modak, and turn it into something that’s even more awesome!

SANDESH MODAK

Ingredients

2 litres full fat milk
2 tbsps yogurt
¾ cup castor sugar
½ cup grated khoya
½ tsp green cardamom powder
2 tsps dried rose petals
8-10 pistachios, blanched, peeled and slivered

Method

1. Boil milk in nonstick pan. Add yogurt and mix well. Once the milk curdles, strain the mixture in a bowl through a muslin cloth.
2. Gather the edges and immediately refresh in chilled water to avoid carry over cooking.
3. Transfer the mixture in a parat, add sugar and mix well. Add khoya and green cardamom powder and mix well.
4. Transfer this mixture in a nonstick pan and cook for 3-4 minutes.
5. Add dried rose petals and pistachios, mix and continue to cook for 2-3 minutes. Transfer the mixture on a plate and allow to cool.
6. Transfer the mixture into modak moulds and press lightly. Demould and arrange on a serving plate and serve.
