The traditional Bengali sweet, sandesh has a separate fan base all over the country. So, we decided why not club it with modak, and turn it into something that’s even more awesome! SANDESH MODAKIngredients2 litres full fat milk2 tbsps yogurt¾ cup castor sugar½ cup grated khoya½ tsp green cardamom powder2 tsps dried rose petals8-10 pistachios, blanched, peeled and sliveredMethod1. Boil milk in nonstick pan. Add yogurt and mix well. Once the milk curdles, strain the mixture in a bowl through a muslin cloth. 2. Gather the edges and immediately refresh in chilled water to avoid carry over cooking.3. Transfer the mixture in a parat, add sugar and mix well. Add khoya and green cardamom powder and mix well.4. Transfer this mixture in a nonstick pan and cook for 3-4 minutes.5. Add dried rose petals and pistachios, mix and continue to cook for 2-3 minutes. Transfer the mixture on a plate and allow to cool.6. Transfer the mixture into modak moulds and press lightly.
