Sandesh Modak Ganesh Chaturthi #YumUtsav Sanjeev Kapoor Khazana

Happiness comes in moulds, just like the sandesh modak which is made with fresh chenna. So delicate and delicious that you just cannot stop eating them.

SANDESH MODAK

Ingredients

2 litres full fat milk
2 tbsps yogurt
cup castor sugar
cup grated khoya
tsp green cardamom powder
2 tsps dried rose petals
8-10 pistachios, blanched, peeled and slivered

Method

1. Boil milk in nonstick pan. Add yogurt and mix well. Once the milk curdles, strain the mixture in a bowl through a muslin cloth.
2. Gather the edges and immediately refresh in chilled water to avoid carry over cooking.
3. Transfer the mixture in a parat, add sugar and mix well. Add khoya and green cardamom powder and mix well.
4. Transfer this mixture in a nonstick pan and cook for 3-4 minutes.
5. Add dried rose petals and pistachios, mix and continue to cook for 2-3 minutes. Transfer the mixture on a plate and allow to cool.
6. Transfer the mixture into modak moulds and press lightly. Demould and arrange on a serving plate and serve.
