A delicious Samo rice Khichdi with peanuts, green chillies and cumin. This coconut-y dish makes it a flavour bomb

SAMO KHICHDI

Ingredients

1 cup samo
1 tablespoon ghee
1 teaspoon cumin seeds
1 teaspoon chopped green chillies
¼ cup raw peanuts
Rock salt to taste
Fresh scraped coconut for garnishing

Method

1. Heat ghee in a non-stick pan. Add cumin seeds and green chillies and sauté for 30 seconds.
2. Add peanuts and sauté for a minute. Add samo, mix and cook till golden. Reduce heat, add 2 cups water and mix well. Add rock salt, mix, cover and cook for 5-7 minutes.
3. Serve hot garnished with coconut and a coriander sprig.

Preparation Time: 5-8 minutes
Cooking Time: 8-10 minutes
