Samo Baked Yogurt #MilletKhazana Sanjeev Kapoor Khazana

Absolutely creamy, light and fluffy baked yogurt but with Samo millet is an unusual recipe made specially for you.

SAMO BAKED YOGURT

Ingredients

cup barnyard millet (samo)
1 tbsp ghee
8-10 saffron strands
1 + cups milk
cup chopped jaggery
tsp green cardamom powder
cup yogurt
cup milk
Blanched, peeled, and slivered pistachios for garnish

Method

1. Heat ghee in a non-stick pan. Add the barnyard millet and saut for 2-3 minutes. Add the saffron and mix well.
2. Stir in 1 cups milk and cook for 5-6 minutes. Add jaggery, mix and cook till the jaggery melts completely. Add green cardamom powder and mix well. Take the pan off the heat and allow to cool completely.
3. Preheat the oven at 180.
4. Transfer the cooked millet into a large bowl. Add yogurt and mix well.
5. Pour the remaining milk and mix well. Transfer this into individual small earthen bowls, cover each bowl with an aluminium foil. Arrange on a baking tray, add some water into the tray and bake it in the preheated oven for 10-15 minutes. Bring the tray out of the oven and allow the baked yogurt to cool completely Refrigerate for 1-2 hours or till chilled completely.
6. Remove the aluminium foil and garnish the baked yogurt with slivered pistachios and serve.
