Everyone loves Sambhar. However, each region has its own way of making Sambhar. Shown in this video is the Kerala style of preparing Sambhar for Onam Sadya.Ingredients:1/2 cup Tuvar dal3 cups of mixed cut vegetables1 Onion roughly chopped1 Tomato roughly chopped1/2 tsp Turmeric powder2 tsp Coriander powder11/2 tsp Red Chilli powder1/4 tsp Fenugreek seeds3/4 tsp Hing2 dry Red Chillies1/2 tsp Mustard seeds1/4 cup tamarind pulp3 slit Green Chillies2 tbsp Coconut Oil Curry leavesSalt to tasteMethod: Wash and soak the Tuvar dal for 30 minutes. Cook the Dal and keep aside.In a pan or earthen pot combine the cut mixed vegetables, chopped Onions, chopped tomatoes, Green Chillies, 1/4 tsp Turmeric powder, 1/4 tsp Hing, Salt to taste and water. Cover and cook till the vegetables are cooked. Add the cooked Dal and Tamarind pulp to the vegetables and simmer. In another pan, dry roast Fenugreek seeds, few Curry leaves, Coriander powder, Red Chilli powder, 1/4 tsp Turmeric powder and 1/2 tsp Hing. Cool and grind to a smooth paste along with a little water.Add the Masala paste to the simmering Sambhar. Check if additional Salt and water is needed.Finally, prepare the tempering by heating Oil and putting in Mustard, broken dry Red chillies and Curry leaves. Pour this tempering over the Sambhar and simmer for 2 minutes. Hot piping Sambhar is ready to serve.Music: http://www.bensound.com
