The perfect starter recipe, Salt and Pepper Chicken, crispy chicken with loads of flavourful spices and healthy veggies is a must-try for all.

SALT AND PEPPER CHICKEN

Ingredients

250 grams boneless chicken leg, cut into 1½ inch thin strips
Salt to taste
8-10 black peppercorns
12-15 sichuan peppercorns
1½ teaspoons sesame oil
1 egg
1 tablespoon oil + for deep-frying
2 tablespoons cornstarch
2 tablespoons potato starch
1 tablespoon chopped garlic
2-3 red bird eye chillies, finely chopped
1 small onion, finely chopped
¼ cup finely chopped mixed capsicum (red, green and yellow)
Two pinches of sugar
1½ teaspoons sesame oil
Chopped fresh spring onion greens for garnishing

Method

1. Put chicken strips in a bowl. Add salt and sesame oil.
2. Break egg yolk in a bowl. Add egg yolk and 1-2 teaspoons egg white to chicken mixture and mix well. Set aside to marinate for 10-15 minutes.
3. Heat sufficient oil in a kadai.
4. Add cornstarch and potato starch to marinated chicken strips and mix till well coated.
5. Put the chicken strips in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
6. Put black peppercorn and sichuan peppercorns in a mortar and crush using a pestle into coarse powder.
7. Heat 1 tablespoon oil in a non-stick wok. Add garlic and red bird eye chillies sauté for 1 minute.
8. Add onion and mixed capsicums and sauté for 1 minute. Add sugar, salt and sesame oil and mix well.
9. Drain the fried chicken strips into the sautéed onion mixture and mix. Add crushed peppercorn powder to taste and toss well.
10. Serve hot garnished with spring onion greens.
