Sabudana kheer is tasty and nutritious Indian pudding made of sago pearls and flavored with green cardamom. Prepare this tapioca payasam during the navratri festival.IngredientsFull cream milk – 1 litre (5 cups)Sago pearls - ¾ cupSugar - ½ cupCashews – 1 tbspRaisins – 1 tbspPistachios – 6-7Green cardamom – 4-5DirectionsGetting ready:1.Soak the sago pearls for half an hour in water. Chop the cashews and thinly slice the pistachios. Crush the green cardamom seeds into fine powder using mortar pestle.Making:2.Heat a vessel with milk. As the milk simmers, add sago pearls to the milk and cook by stirring constantly until the milk starts boiling again.3.Later, reduce the flame and put raisins and cashews to the milk. Mix properly and cook until the sago pearls become soft. Then add sugar and crushed green cardamom in the kheer and mix thoroughly.
