Russian Cutlets, made with shredded chicken and veggies are deep fried till golden and perfectly crisp.

RUSSIAN CUTLETS

Ingredients

300 grams boneless chicken breasts, boiled with ginger-garlic paste and shredded
8-10 French beans
½ tbsp oil
½ tbsp ginger-garlic paste
1 tsp green chilli paste
1 medium carrot, grated
Salt to taste
2 tsps Tata Sampann Garam Masala
3 medium potatoes, boiled and peeled
Oil
2 eggs
Roasted vermicelli (seviyan) as required
Green chutney to serve

Method

1. Thinly slice the French beans and set aside.
2. Heat oil in a non-stick pan, add ginger-garlic paste and green chilli paste, mix well. Add carrots and beans. Sauté for 1-2 minutes.
3. Add salt and mix well. Cook for 3-4 minutes, sautéing constantly. Add shredded chicken and mix well. Cook for 1-2 minutes.
4. Add Tata Sampann Garam Masala and mix well. Take it off the heat and transfer into a bowl.
5. Mash the potatoes and add them to the pan. Mix till combined. Adjust salt if needed and mix well.
6. Divide the mixture into equal portions and shape each into an oblong shape.
7. Heat sufficient oil in a kadai, meanwhile break in the eggs in a bowl, add salt and whisk well. Set aside.
8. Break vermicelli on a plate and set aside. Dip each cutlet into the eggs, roll it into the vermicelli.
9. Drop the cutlets into the hot oil and deep fry till golden and crisp. Drain on an absorbent paper.
10. Serve hot with green chutney.
