Royal Kashmiri Wazwan | Sanjeev Kapoor Khazana

Kashmiri Wazwan, just like it’s beautiful name, yeh koi sadharan si ‘dish’ nahi hai, ye ek puri aalishaan dawat hai! In fact it is a heritage, an emotion, and almost as important part of any celebration as the bride and groom of any wedding, so to say! Out of all the greatest Indian feasts, Wazwan surely takes the trophy home. I was delighted to be invited to experience this out-of-the-world multi-course Kashmiri meal Wazwan! Aisa moka bar bar nahi milta, ye soch ke mein nikal pada… Stepping out of the Shikara, an array of aromas welcomed me, and the temptation to relish Kashmir’s pride, Wazwan increased multi-fold. Typically Kashmiri wazwan is a meat-laden banquet comprising of 36 distinctive dishes like Rista, Rogan josh, Kebabs, gushtaba and a lot more, served in a unique copper plate called Traem. Despite the long process, the way in which Wazas, the traditional master chefs, prepare and serve this ceremonial spread, makes it all surreal. Wazwan ke bina samjho koi bhi bada sa occasion adhura hai! Serving Wazwan is considered a mark of hospitality of Kashmiris as it truly represents the beautiful amalgamation of tradition and culture. Which is why it’s considered so much more than just a meal. I must say, this blast of flavours, techniques, and hospitality gave me the true taste of Kashmir!
