Roti Rajma Pizza | Sanjeev Kapoor Khazana

A great way to use up your leftovers! This red kidney bean addition to a homestyle pizza makes this a not just unique but also a delicious spin to the daily normal meals.

ROTI RAJMA PIZZA

Ingredients

4 leftover rotis
½ cup leftover rajmamasala
1 tablespoon olive oil + for greasing
6-8 button mushrooms, quartered
Salt to taste
1 tablespoon tomato ketchup
5-7 fresh basil leaves
Grated mozzarella cheese as required
½ medium red bell pepper, cut into juliennes
½ medium yellow bell pepper, cut into juliennes
½ medium green capsicum, cut into juliennes
¼ cup boiled corn kernels
8-10 black olives

Method

1. Preheat oven at 180ºC. Grease a baking tray with some olive oil.
2. Heat 1 tablespoonolive oil in a non-stick pan. Add mushrooms and salt, toss to mix and cook for a minute. Remove from heat.
3. Grind together rajmamasala, tomato ketchup and torn basil leaves to a coarse paste.
4. Place each roti onto a baking tray, spread some rajma-tomato ketchup mixture evenly, top with some cheese, bell pepper, yellow pepper, green capsicum, corn kernels and cooked mushrooms.
5. Slice black olives and place on top. Place the baking tray in preheated oven and bake for 5-7 minutes or till the base is crisp.
6. Slice and serve hot.

Preparation Time: 5-8 minutes
Cooking Time: 8-10 minutes
