Roasted Cherry Tomato and Guacamole Sandwich | Sanjeev Kapoor Khazana

These sandwiches are simply yummy with the goodness of guacamole and flavour of roasted cherry tomatoes.

ROASTED CHERRY TOMATO AND GUACAMOLE SANDWICH

Ingredients

10-12 cherry tomatoes
1 avocado, deseeded, scoop out flesh and mashed
4 rye bread slices
Oil for drizzling
Crushed black peppercorns for sprinkling
Salt to taste
1-2 fresh rosemary sprigs
1 tablespoon finely chopped tomato
1 tablespoon finely chopped onion
1-2 green chillies, finely chopped
1 tablespoon chopped fresh coriander leaves
Juice of ½ lemon
Creamed feta cheese for spreading
Alfalfa as required

Method

1. Preheat oven at 200º C. Line a baking tray with silicon mat.
2. Halve cherry tomatoes and transfer them onto the lined baking tray. Drizzle some oil and sprinkle some crushed peppercorns and salt on top. Put some torn rosemary sprigs.
3. Place the baking tray in preheated oven and roast for 10 minutes.
4. To prepare guacamole, take avocado in a bowl. Add tomato, onion, green chillies, chopped coriander, lemon juice, salt and crushed peppercorns and mix well.
5. Spread some feta cheese and guacamole on each bread slice. Put some roasted cherry tomatoes on top.
6. Serve immediately.
