Cauliflower is a pretty bland tasting vegetable but when you roast it in the oven and then coat it with this delicious sauce, this vegetable comes to life with this wonderful sauce.

Roasted Cauliflower Recipe

Ingredients:
1 head of cauliflower, rinsed, dried, trimmed of leaves and core removed
cup olive oil
1 Tbsp. fresh lemon juice
1 Tbsp. apple cider vinegar
2 tsp. Maple syrup
1 clove garlic, minced
avocado
Salt
1 tsp. Dijon mustard
cup parmesan cheese
Small handful of parsley

Directions:
Preheat oven to 375 degrees F.

Place the trimmed cauliflower in a cast iron pan or a baking dish. Pour a little olive oil over the cauliflower and rub it in all over including the bottom. Season with salt and bake in the oven for 30 to 35 minutes.

While the cauliflower is roasting, place all of the other ingredients into a food processor and blend until smooth.

When the cauliflower turns a golden brown after 30 - 35 minutes, bring it out of the oven and spoon over the sauce to cover the whole head including the sides.

Place the cauliflower back in the oven and bake an additional 20 minutes.

This recipe makes a nice side dish to any beef, chicken or fish. Enjoy!
