'Kalan' means mushroom in Tamil and this is a classic street food from Tamil Nadu. Mushrooms & cabbage mixed together, shaped into balls, fried till crispy and later cooked in a masaledar mixture.ROADSIDE KALANIngredients1½ cups finely chopped button mushrooms½ cup finely chopped cabbage1 tbsp red chilli powderSalt to taste¼ cup refined flour (maida)¼ cup corn flourOil for deep fryingMasala1 inch cinnamon stick, broken8-10 black peppercorns3-4 cloves1 tbsp fennel seeds1 inch ginger, roughly chopped10-12 garlic cloves¼ cup fresh mint leaves2 small tomatoes, quartered2 tbsps oil1 tsp cumin seeds10-12 curry leaves1 medium onion, finely choppedSalt to taste2 tsps red chilli powder2 tsps curry powder2 tbsps chopped fresh coriander leavesMethod1. To make the pakoda, take mushrooms in a large bowl, add cabbage, red chilli powder, salt, refined flour and corn flour and mix well. 2. Heat sufficient oil in a kadai. 3. Take small portion of the mixture and slide into the hot oil. Deep fry till golden and crisp. Drain on an absorbent paper. 4. Put cinnamon stick in a mixer jar. Add black peppercorns, cloves, fennel seeds, ginger, garlic, mint leaves and tomatoes and grind to a coarse paste.5. For the masala, heat oil in another kadai. Add cumin seeds and curry leaves and sauté well. Add onion and sauté till translucent.6. Add salt and sauté for 1 minute. Add the ground paste and mix well. Cook for 1-2 minutes.7. Add red chilli powder, curry powder and coriander leaves and sauté for 1 minute.8. Add ¾ cup water, mix and cook for 1-2 minutes.9. Add the pakoda and mix to coat well with the masala.
