Serves 4 persons
This is an unusual Lenten dish, combining aromatic, mellow rice with boiled squid aka Calamari that is canned in brine and some of its black ink. The process followed is the same as making a typical Risotto but the black brine is added in the sauce, for extra taste.
When I was a child, during Lent, I used to hate eating the canned calamari plain, with seasoning and lemon. Now, I love it when I prepare it like this!
A simple and delicious one-pot family meal. Let's see how it's prepared !
Suitable for fasting.

INGREDIENTS:
370 gr/ 13 oz Canned, California Boiled Squid, in brine (net weight: 220 gr/ 7.8 oz)
1& cup / 330 gr / 11.6 oz Rice Carolina or Arborio or Risotto for mellow, mushy rice
1 medium Onion, cubed
15 ml / 1 tbsp. Tomato Paste (puree)
2 Bay leaves
cup / 125 ml White Wine
1 tsp. All-spice (bahari)
1 tsp. ground Nutmeg
45 ml /3 tbsp. Olive Oil
About 1 lt. / 4 cups very hot Water
Ground Salt and Pepper
Optional to garnish: 1/3 bunch fresh Parsley, finely chopped
