Rice Papdi Tea Time Snacks Sanjeev Kapoor Khazana

A deep-fried, flavoured and spiced rice flour preparation thats a great tea-time snack and that can be offered as a giveaway.

RICE PAPDI

Ingredients

1 cup rice flour
2 tbsps soaked split skinless green gram (dhuli moong dal)
2 tbsps soaked sago (sabudana)
1 tsp cumin seeds
tsp carom seeds (ajwain)
1 tsp white sesame seeds
tsp black pepper powder
1 tsp ginger-garlic paste
8-10 curry leaves, finely shredded
1 tbsp chopped fresh coriander leaves
Salt to taste

Method

1. Combine together rice flour, soaked split skinless green gram, soaked sago, cumin seeds, carom seeds, white sesame seeds, black pepper powder, ginger-garlic paste, curry leaves, and coriander leaves in a large parat. Add salt and 1 cup lukewarm water and mix till a soft dough is formed.
2. Take a small portion of the dough, shape it into a ball.
3. Place plastic sheets on both sides of a roti press, grease it with oil and place a dough ball in the centre. Press to make a small disc.
4. Heat sufficient oil in a kadai. Gently slide the discs in the hot oil and deep fry on medium heat till golden brown and crisp. Drain on an absorbent paper. Allow to cool slightly.
5. Arrange the papdis in a serving bowl or a jar. Serve.
