Rice Gnocchi How to make Gnocchi at Home Sanjeev Kapoor Khazana

A gluten-free gnocchi made using rice, when tossed in herbs and spices is just right for simple meals.

RICE GNOCCHI

Ingredients

2 cups rice flour
Salt to taste
3-4 tbsps olive oil
2 tbsps chopped garlic
2 tbsps chopped fresh mixed herbs
2 tsps red chilli flakes
Salt to taste
Crushed black peppercorns to taste
2 tbsps chopped fresh basil leaves
2 tbsps chopped fresh parsley leaves
tsp butter
Toasted bread slices to serve

Method

1. Bring 2 cups water to a boil in a deep non-stick pan, add salt and mix.
2. Add rice flour and mix, cover and steam on low heat for 1 minute. Take the pan off the heat and transfer the dough into a large plate.
3. Knead the dough using the back of a small ladle till it cools slightly. Once the dough is warm, start kneading with the palm of your hands till a smooth and soft dough is formed.
4. Dip your palm in water and divide the dough into small equal portions and shape each portion into a ball.
5. Dip the folk into water and roll the ball over a folk to shape it like gnocchi. Arrange these in a steamer basket.
6. Heat sufficient water in a steamer. Place the steamer basket over it, cover and steam for 8-10 minutes.
7. Switch the heat off and remove the steamer basket and keep aside to cool slightly.
8. Heat olive oil in nonstick wok. Add garlic and saut on medium heat for 1 minute. Add mixed herbs, red chilli flakes and mix well. Toss in the prepared gnocchi and cook for 2-3 minutes.
9. Add salt and crushed black peppercorns and mix well. Add basil and parsley and mix till well combined. Add butter and toss well.
10. Transfer into serving bowl and serve hot with toasted bread slices.
