Red Velvet Cupcakes (Egg-free)

Makes 15 standard-sized cupcakes

(220 grams) 1 cups of cake flour
1 tsp. of baking soda

1 tbsp. of cocoa powder
(150 grams) cups of granulated white sugar
(125 ml) cup of vegetable oil
(125 ml) cup of water
(125 ml) cup of yogurt
1 tsp. of vanilla extract
1 tsp. of red food coloring
3 tbsp. of vinegar
tsp. of salt

You will need half recipe of my Cream Cheese Frosting,

1. Preheat your oven to 180/160C fan-forced. Line cupcake pan with paper liners.

2. In you mixing bowl, add all the ingredients except for cake flour and baking soda. Mix well.

3. Turn your mixer down to low and gradually add in cake flour.

4. Lastly, throw in baking soda.

5. Transfer into your cupcake tin. This recipe makes about 15 standard-sized cupcakes.

6. Drop the pan lightly a few times on to the counter top to release the air bubbles.

7. Bake in the oven for 20 to 25 minutes.

8. Let it cool in the pan for about 10 minutes, transfer them on the wire rack to cool.

9. Once cooled, pipe cream cheese frosting on top of the cupcakes.
