Ingredients Quantity For Stuffing: Red Pumpkin 250 gm. Sattu 1 cup Onions finely chopped 1 no.(Big size) Ginger finely chopped 1 inch Green chillies finely chopped 2-3 no. Carom seeds (Ajwain) 1 tsp Salt to taste Black salt 1 tsp Kachi Ghani Mustard Oil 2 tbsp Coriander leaves chopped 2 tbsp Lemon juice ½ no. For Dough: Whole wheat flour (atta) 2 cup Carom seeds ½ tsp Salt to taste Ghee as required For sprinkle: Red chilli powder ½ tsp Chaat masala ½ tsp Method: 1. Peeled the pumpkin and cut into small cube and blend into fine puree. keep it aside 2. To prepare filling, combine chopped onions, ginger, green chillies, carom seeds, salt, black salt, sattu, kachi ghani mustard oil and chopped coriander in a bowl and mix well. 3. Take a parat, add wheat flour, carom seeds, salt and pumpkin puree, mix well and knead soft dough. 4. Apply 1 tsp of ghee and knead again. Keep it aside. 5. Add lemon juice in the stuffing and mix well. 6. Dust the worktop with some flour, divide the dough into equal portions, roll in flour and shape into a ball. 7. Take a dough ball and flatten by pressing it between your palms. Place 1 portion of prepared stuffing in the centre, press it, bring the edges together and shape into a ball again. 8. Dust the worktop with some flour and Roll out the prepared balls into thick parantha. 9. Heat a non-stick tawa. 10. Place the parantha on the heated tawa and cook for 1 min from both side.
