Ingredients—3/4 to 1 cup milk or almond milk2 eggs1 banana2 cups rolled oats, pulsed into a powder2 scoops vanilla whey protein powder1 tablespoon maple syrup2 teaspoons baking powder1/2 teaspoon salt1 egg whiteToppings:1/3 cup peanut butter2 tablespoons maple syrupBerries (optional)Steps—In a blender, add all ingredients except egg white. Blend until smooth. Whisk egg white until stiff peaks form, then fold into the batter. Spray a skillet with nonstick cooking spray and place over medium-high heat. Pour in 1/3 cup pancake batter. Let cook until bubbles begin to form on the surface, then flip. Repeat with remaining batter.Melt peanut butter and maple syrup and pour over pancakes.
