Serves 4 - 6 pax


Meat filling
-----
250g of minced meat (can be pork or chicken)
200g of fish paste
2 tablespoons of low sodium light soy sauce (https://amzn.to/348WBVw)

1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)

2 tablespoons of cornflour (https://amzn.to/2s60tIL)
1 teaspoon of sesame oil (https://amzn.to/2Oxus3P)
A few dashes of white pepper (https://amzn.to/35rsqJd)

Stuffed Tofu
---------
3 pieces of 200g of firm beancurd - cut into triangles

Stuff tofu with the marinated meat stuff as shown above and shallow fry them on all sides

Tofu Meatballs
----------
1 tablespoon of low sodium light soy sauce (https://amzn.to/348WBVw)
Tofu bits dug out from the firm tofu above
Mix everything into the balance meat filling
Make them into balls and shallow fry them. Recommended to double fry these meatballs because the second fry can help to purge any trapped oil within the meatballs.

Other ingredients

10g of minced young ginger

80g of minced red onion
4 cloves of garlic (https://amzn.to/32Rw39K)
2 tablespoons of oyster sauce (https://amzn.to/2XB1WSQ)
1/2 tsp of sugar (https://amzn.to/2KsaRRc)
1 cup (250ml) of water
1 tablespoon of premium dark soy sauce (https://amzn.to/33awVq6)
1/2 teaspoon of salt (https://amzn.to/2QGJ4jV)
Some greens
Some cornstarch solution (https://amzn.to/2s60tIL)
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)

*cornstarch solution = mix some cornstarch with some water - enough to dissolve them. Mix well before adding to the sauce you're trying to thicken.
