Rawa Cheese Cutlets | रवा चीज़ कटलेट | FoodFood

These semolina cutlets have a mouth-melting texture with a crisp exterior and feel heavenly when it's served hot! Definitely a must-try.

Ingredients

1 cup semolina (rawa)
2 tsps butter
2 tsps refined flour (maida)
1 cup milk
30 grams processed cheese
Salt to taste
¼ tsp dried mixed herbs
Oil for greasing + for shallow frying
Spice mix
2 tsps crushed black peppercorns
1½ tsps onion powder
1½ tsps garlic powder
1½ tsps piri piri powder
1½ tsps sea salt
Mayo to serve
Tomato ketchup to serve

Method

1. Heat a non-stick pan, add semolina and dry roast till fragrant. Transfer in a bowl and set aside to cool to room temperature.
2. Heat butter in another non-stick pan, add flour and mix well. Cook for a few seconds.
3. Add ½ cup milk and whisk till well combined. Add ¼ cup milk and continue to whisk to a smooth mixture.
4. Grate cheese and whisk. Add remaining milk and mix well.
5. Add salt, mixed dried herbs and whisk. Add the semolina and mix till the mixture becomes thick and forms a dough. Take it off the heat.
6. Grease a burfi mould with oil, transfer the mixture into it and spread it evenly. Flatten the mixture to even out the top. Refrigerate till set.
7. For the spice mix, add crushed black peppercorns, onion powder, garlic powder, piri piri powder and sea salt in a mortar and pestle. Grind to a fine powder.
8. Cut the set semolina mixture into equal squares.
9. Heat sufficient oil in a non-stick shallow pan, shallow fry the prepared cutlets till golden brown and crisp. Drain on an absorbent paper.
10. Sprinkle the prepared spice mix and rub till well coated. Transfer on a serving plate.
11. Serve hot with mayo and tomato ketchup.
